I had heard about modular kitchens, but I was never really sure what they were until our carnival was canceled due to the flooding we were experiencing.
Many of the people who cooked at the carnival used that money to help them with their income for the year, and I wondered what they were going to do this year.
It wasn’t until I was shopping one afternoon, and I saw the modular kitchens set up along the highway in store parking lots, selling food. They were able to move those modular kitchens to different areas. Now that they had the ability to use the store parking lots, they were making money again. The modular kitchens gave the people the ability to travel all over and sell their food. I walked up and ordered enough sandwiches to take home for my family for lunch, and started talking to the man who was inside doing the cooking. I asked him if business was better here, or at the carnival. He smiled and said he didn’t realize the difference until the carnival was canceled. People loved his steak hoagies, and followed him around the area. He was making more money, thanks to his modular kitchen, and still seeing his regular customers. I walked away thinking it might be fun owning a modular kitchen and making the circuit of store parking lots and carnivals. I made some pretty amazing food, according to my family, but I wasn’t sure other people would enjoy it. My husband told me he didn’t think we could afford a modular kitchen, but if I wanted to try it, he would buy one for me.
